The trees benefit from a permanent irrigation system, activated only when necessary in order to avoid the “water stress”, which would cause an alternating production and a low-quality fruit.

 

The land is tilled from three to four times a year. The fertilization is annually carried out using “Speciale Uliveto”, a mixed organic and chemical granular fertilizer, and occasionally organic fertilizers, such as “stable manure” and “chicken manure”.

 

Every year we do a light pruning, so as to preserve the right balance between crown and root system, which is essential for a production as steady as possible.

 

Fungal diseases are fought by means of copper-based treatments (which are allowed in organic farming), performed twice in spring and twice in September.

 

Against olive fly attacks we carry out two treatments: at the beginning of September, applying a third class dimethoate-based product, which has a 30 days waiting period, and at the beginning of October, using “deltamethrin”, a fourth class product, which has a waiting period from 3 to 7 days. However, we perform the last treatment against this kind of parasite (which is the first cause of an increase in free acidity) at least 40 days before the harvest.

As a consequence, there is no harmful to health pesticide residue in our olive oil .

 

The harvest usually begins around 10th-15th November, depending on the climate. The olives are picked from the trees employing “Cifarelli” olives shakers. Then, they are collected in nets and loaded into a van, which carries them on the same day to the oil mill, where they are pressed within 24 hours (in most cases within 1 hour).

 

Our olive oil is extracted and packed at the De Cillis Oil Mill S.R.L., located in C.da Specchia di Mare – San Vito dei Normanni (BR) – Italy – which employs a “Rapanelli” continuous system with hammer mills, extraction through three-phase decanter and temperature control under 27°C (cold extraction).

 

All the cultivation operations executed throughout the year, as well as the phytosanitary treatments, are regularly recorded on a farm book (as provided for by law), which represents an important instrument for the sake of transparency, being always available to all customers.
